Eleanor found a carrot cake American. As you know, I am a fan of the cakes. Randomly review, The Express Styles,  I find a carrot cake. Yes a cake carrot, but version of love sugar. Nice taste of cheese with the vanilla kind cream cheese, more carrot we feel not at all, apart from its sweetness. This is a recipe  Rose Carrarini  " The cakes Mom under American influence ". I will not say it was giant out of the oven. As for my trip to the States last year, nothing is small home. We try at least once ... and for my part, I will return happily. Butter mold 

4 eggs 

225 g caster sugar   -   30 cl of sunflower oil 

4 medium carrots, finely grated 

300 g of sifted flour 

1 teaspoon powdered cinnamon 

1 spoonful of baking powder coffee 

½ teaspoon baking soda 

½ teaspoon of salt    -   150 g of chopped nuts 


For the icing : 

125 g of softened butter 

250 g of cream cheese ( Philadelphia or fresh Square) 

½ teaspoon vanilla extract natural 

50 to 75 g icing sugar to taste



- Preheat oven to 180 ° (th 6). Butter and lined with parchment paper a rectangular mold of 32 cm in length. Beat eggs and powdered sugar until fluffy.

- Add oil and beat a few more minutes. Add the carrots, then the flour, cinnamon, baking powder, baking soda, salt and finally the nuts. Pour into pan and bake for about 1 h 10 (a knife blade inserted into the cake should come out clean) 

- Remove from oven and allow to cool.   


- Beat butter and cream cheese a few minutes until creamy. Add vanilla and icing sugar. Turn the cake and top with this preparation.
