Seasonal recipe: the onion soup

 

Nothing better to start the year and in addition it is good for our poor stomach that has seen all the flavors.

Ingredients for 4 people:
- 8 yellow onions
- Butter
- 15g flour
- From veal
- 4 eggs
- 4 slices of bread
- From chives

 

The steps of the recipe:

1) Slice the onions. Melt the butter in a saucepan. Onions should go smoothly for about 10 minutes.
Attention onions should not stick to the bottom of the pan.
2) Add the flour into the pan. The flour used to thicken the soup to make it smooth. Then add the veal stock ..
3) For the poached egg, pour in a cup a teaspoon of white vinegar. Break your whole egg in the container without breaking it.
4) Fill a pot of boiling water and place it gently whole egg in the pan. The cooking time is 3 min.
Pay attention to the temperature of the water if the water is too hot, the egg will cook too fast.
