Here is a carrot cake absolutely delicious, less sweet and less fat most recipes that we have proposed, but just as soft and moist! The perfect cake for a breakfast both delicious and healthy, perfect for sports or those who are tired of industrial pastries.

If you like cakes, but you do not want to make difference I assure you, the pastry "health" exists and offers so many opportunities ... Just replace some ingredients to get the equivalent in lighter or "healthy". For example, I often replace white sugar with unrefined brown sugar or of honey, maple syrup or other butter with theorganic coconut oil, I often put a little wholemeal flour, of Dried fruit and of seeds in my recipes.
After great success with my cake "healthy" with banana and chocolate, I wanted to make a healthy version of my favorite cake, carrot cake. I made dozens (see recipes from the blog), but I wanted it to be worthy of a cake breakfast, so we can soak our latte without a hypoglycemic crisis one hour after. My challenge worked: it was enjoyed and then they held until lunch without problems
Why is the cake so soft? Besides grated carrot that gives it its wet texture, Greek yogurt that's the secret. Finally if we can still talk about secret here after tasting the cake yogurt parfait or this wonderful cake, marmalade!
I wanted a cake slightly "cake" (drier?) That it really very wet and rather serves only breakfast cake. I needed the perfect cake to imbibe latte without disintegrating, and this recipe is PERFECT
Here is our cake without complex carrots!
For a cake mold 30cm:
150g wheat flour (or another even without gluten if you prefer)
50g rolled oats mixed (ground into flour)
1 teaspoon baking soda tea
1 teaspoon baking powder
1 pinch of salt
1 cinnamon C.S.
1 organic coconut oil C.S.
60ml of milk (lactose or vegetable)
125g Greek yogurt (or soy)
180g grated carrots
80g chopped walnuts
Preheat oven to 200 ° C.
Mix the flour, baking soda and baking powder. Add salt and cinnamon. Melt the honey and coconut oil in a bowl in the microwave, then add them. Stir, then add the milk and egg. Stir well. Add the yogurt, carrots, walnuts and raisins.
Pour into a silicone mold or lined with parchment paper and bake for 43 minutes.
Let the cake cool completely before unmolding. Cut it with a knife, it is very soft!
